Moroccan Chickpea

Authentic food from East, and Africa, my one origin is from my friend from Morocco.


Ingredients are

Chickpea, leave it under water a day before.

Mainly you need to use cumin, onion, garlic, star anis, ginger, cinnamon, cardamom.

Don’t forget lemon, orange and lime zest, juice

No need to make it complicated, 1 onion, fine chopped, 4 cloves garlic minced, from anis 1/4 star, from ginger, cumin, cinnamon take 1/4 teaspoon each, cardamom 1/8 teaspoon, salt , freshly greated pepper to taste.

2-4 tomato, depends on size, pealed, cleaned, small chopped.

Onion sweat off first, to get nice goldenbrown colour on olive oil.

Add garlic, but don’t burn it.

Add the rest four ingredients, and cook like a stew. You gonna need probably a good 1/2 hour, until the chickpea is soft, but still have a small bit of crunch. You can add vegstock, to keep it vegan, for myself i use chickenstock.

Sprinkle some fresh coriander on top.

Naan bread is a perfect choice to dip.
